Breakfast Sammy

I was craving Brinner tonight!!! Brinner = breakfast for dinner.  Today was the first day after my three nights on and I was craving breakfast yumminess and this is what I came up with!  As a side note: I need a new camera and some food styling lessons.  This pic does not do this sammy justice!!

Canadian Bacon and Fried Egg Sammy (9 WWPP points)

Stuff I made it with and how I made it:



Heat a nonstick pan over med high heat and add 5 slices of Land O Fost Canadian Bacon (1). This stuff is awesome! Low in points and delish. Let the bacon cook until it has nice caramelization going on each side. Meanwhile toast a Oroweat Multi-Grain Sandwich Thin (3), or thin of your choice. Remove the bacon from the pan and put in one egg (2). Salt and Pepper to taste and fry until desired doneness. I let my egg cook to over easy. While your egg is cooking divide 1 TBS of miracle whip (1) or mayo to each side of your toasted thin. I added 1 tsp of ketchup (0) and a dash of Chulula (0) to the top thin for added kick. Remove egg. To assemble, add greens (0) of choice to the bottom thin. I used arugula, but spinach or baby mixed greens would be fabulous. Add the egg on top of the greens, then 1 oz of shredded cheese (2), the bacon, then the thin top. Voila!! This sammy is Heaven! You have the crisp, salty bacon with the velvety richness of the oozing egg yolk, and the peppery taste of the arugula and the slight tang and heat from the miracle whip and chulula!  The perfect bite!  Serve with fruit or a side salad (or a combo as I did) for a delicious, filling meal!  Enjoy!

PEANUT BUTTER HEAVEN



This stuff is my new favorite! I could eat peanut butter
all the time, but it is so high in fat, and is 5 WW points for 2T.
I found this powdered peanut butter on another persons
blog, and decided to order it and give it a go. I am in LOVE!
It tastes just like regular peanut butter. You just mix 2 T
of the powder PB goodness with 1 T water. Or you can add the
powder to any recipe you want: oatmeal, cookies, & smoothies.
The best part, it is only 1 WW point for 2 T. It has 85% less fat
than normal PB. It is basically just pressed peanuts, sugar,
and salt. The shipping is a little costly, but I think it's

Chicken & Guacamole Tostadas


I found this yummy recipe in Cooking Light
magazine. It is delicious and takes about 20 min.
to make!!!!

1 avocado
1 cup plus 2 T finely chopped tomato, divided
3 T minced fresh onion, divided
3 T fresh lime juice, divided
1/2 t salt, divided
1 small garlic clove, minced
1 T chopped fresh cilantro
1 T minced seeded jalapeno pepper
2 cups shredded skinless, boneless rotisserie
chicken breast
1/4 t smoked paprika
8 (6-inch) corn tostada shells

1. Place avocado in a small bowl; mash with a
fork. Stir in 2 T tomato, 1 T onion, 1 T lime juice,
1/4 t salt, and garlic.

2. Combine remaining 1 cup tomato, 2 T onion,
1 T lime juice, 1/4 t salt, cilantro, and jalapeno;
toss well.

3. Combine chicken, remaining 1 T lime juice,
and paprika; toss well to combine. Spread about
1 T guacamole over each tostada shell; top each
with 1/4 cup chicken mixture and about 2 T
salsa.

Yield: 4 servings (serving size: 2 tostadas)
